Aloo Palak




I have so many potato recipes on the blog and I have so many spinach recipes on the blog too and so it was about time I shared a recipe which had both – potato (aloo) and spinach (palak). The thing with potato is that it’s added to a lot of Indian curries and gravies. I think we have this habit of adding potatoes to anything and everything. You add it to cauliflower, you get aloo gobhi. You add it to beans you get aloo beans and you add it to spinach you get aloo palak!

Now aloo palak can be made in a number of ways. I also make it in several ways, sometimes I add water to the spinach and make it like a curry and then add potatoes to it. The version I’m sharing today is one of my favorite and also the easiest. It comes together quickly and what I like most about this recipe is that it uses some very simple spices and ingredients.

Ingredients


  1. 1 lb baby spinach
  2. 2 potatoes, medium, cubed
  3. 2 teaspoons vegetable oil
  4. 5-6 garlic cloves, big, chopped
  5. 3-4 dry red chilies [1 broken, rest as such]
  6. 1 small onion, chopped
  7. ¾ teaspoon coriander powder
  8. ¼ teaspoon turmeric powder
  9. ¼ teaspoon cumin powder
